Vegan Waffles


Our recent guests left us with the sweetest parting gift I could ever think of: a waffle iron. This was a dream come true for me, so of course I had to use it right away and make some yum-o peanut butter waffles from Vegan Brunch. How many times have I looked at this recipe, yearning for the day I could finally make such a peanut butter-y breakfast treat (let me tell you, it was a lot)? I was so excited I even did some dances around the kitchen while the waffles were cooking.

We topped them with a quick homemade chocolate sauce and powdered sugar, and these waffles were a delicious and decadent dessert at the end of the day. We only wished we had some ice cream to serve with them as well, that would have been the bee's knees.

I've fought off the urge to make waffles for every meal the latter half of this week, but I know what I'll be making us for a yummy brunch on Saturday, complete with tofu scramble and berry sauce. I think I'll have waffles on my mind for quite a while, and every time I use this perfect gift, I know who else I'll be thinking of (thank you guys so much! We can't wait to see you again!).
