Comfort Food


C has been out of town for work and I tend to not eat so well when he's away. It's like I almost revert to eating like a 16 yr old - fake mac and cheese, lots of cookies and other snacks, too much caffeine. This time I'm really trying to cook healthy & delicious meals for myself (and not go crazy with coffee) and tonight's meal was quite the success. Vegan alfredo sauce (with silken tofu), marinated mushrooms and roasted brussel sprouts were just the yummy comfort food I needed. This was my first time making an alfredo sauce (vegan or not) and although I accidentally added too much salt I thought it had a great flavor and would certainly make it again. I think it would also do well in a mac and cheese with a few minor adjustments. And brussel sprouts! I have re-ignited my love of brussel sprouts tonight. Healthy comfort food might seem like an oxymoron but it can be done. Thank goodness.
