As much as I love cooking yummy fresh meals sometimes I just want a quick dinner when I get home from work. One of my favorite go-tos is Roads End Organics Mac and Chreese, a box mix that has been included in my regular dinner rotation for about seven years now. It comes with dried pasta and a powder cheesy sauce that by itself is a little bland, but it's a great foundation for additional seasoning.
This night I blended the powder packet with 1/2 a container of silken tofu, soy milk, Braggs, salt, pepper and jalapeno powder. I heated the mixture on low heat for a few minutes before adding in the cooked and drained pasta. It created a thick, creamy sauce with a yummy protein kick. Other favorites to add into this mix include tvp (spicy, of course) and edamame. This certainly isn't my greatest culinary achievement, but after a long day of work it tastes like a bit of comfort with only a fraction of the dinner-work.
