Crispy Jalapeno Chips
This was an idea stolen from the glorious Waldo Pizza (I find myself missing this KC pizza haven more and more each day). Aside from all the wonderful vegan pizza options and schmancy vegan desserts they offer there is also a rather lovely salad bar. One of the toppings available after all the veggies is crispy jalapeno chips. Wha-wha-what? Yes, crispy jalapeno chips. So spicy, so crunchy, so perfect on top of spinach and broccoli and tomatoes (and everything). I think there are a lot of different ways to make these - I'm curious to try baking them - but I just sliced up about four jalapenos, sauteed them in oil on medium-high heat for a few minutes until browned and crispy-looking, and voila! A crispy salad topping. I'm planning on making these in large bunches to have on hand to add to numerous dishes - not just salads, but pizzas, stir fries, sandwiches, almost anything that could use a little heat. And we're suckers for spice, so I foresee us going on a jalapeno binge real soon.

On pizza, oh yes. I would throw them in a burrito for a bit of crunch and heat too.
